2 cactus leaves – shave off thorns

cut into 1/4 inch strips

slice strips so they are approximately 1/2 inch long

boil 2 quarts of water in saucepan; add cactus and simmer about 10-15 minutes (may need to skim off “drool”); drain

mix in other ingredients:

1 red onion chopped

1-2 tomatoes chopped

1/2 cup or so cilantro, chopped

2 Tbsp – 1/4 cup lime juice

2 Tbsp – 1/4 cup oil

salt to taste
